* Sauté onions and peppers in a tad of oil,
* Add diced potatoes (we prefer red) and a bit more oil, season (we use creole and garlic seasoning), cook until tender. Stirring regularly.
* I remove from pan to drain excess oil.
* I do in oven and electric skillet.
