Sweet potatoes: 1 kilo (cut into cubes)
Olive oil: 2 tablespoons

How to prepare
Preheat the oven to 200°C.
Arrange the potatoes in an oven tray, sprinkle with oil, cumin, and a pinch of salt, and stir well.
Put the tray in the oven for 30 minutes, then remove and leave to cool.
Grate the lemon and add a teaspoon of zest and a tablespoon of its juice over the sour cream with garlic and a quarter of a teaspoon of salt, stirring until combined.
Place the roasted sweet potatoes, cilantro and avocado in a large bowl, stir, then add a little more of the sour cream mixture.
Stir the ingredients well.
Transfer the salad to a serving dish and garnish with the rest of the cream.
