2 large eggs
2 tbsp margarine
Red pepper or cherry tomatoes
Salt and pepper to taste
In a bowl beat eggs, milk and salt and pepper.
Heat margarine in a non-stick frying pan over high heat until sizzling. Reduce heat to low.
Pour in the egg mixture and cook for 3 minutes or until egg starts to set.
Sprinkle all the remaining ingredients over omelette. Cook for 3 to 4 minutes or until egg is golden and set.
